Main objective of the job is to oversee the operation of all F&B outlets, Kitchen, Kitchen Utility and Entertainment Departments to managed successfully as an independent profit centre. Work with each Chef de Cuisine and outlet managers to set annual operating targets. Monitor cost of all kitchens and provide recommendation. Monitor food standard in each outlet and train & develop Chefs and Managers to work independently. Work with F&B Team to develop special promotions. Regularly inspect all kitchens and equipment to ensure the quality and hygiene standard. Monitors service and food & beverage standards in all outlets. Meet with Purchasing and suppliers to learn new products or methods. Regularly provide feedback to Chefs and outlet managers on food presentation and service.
